Savory vegetable galette

A galette is a delicious light meal for breakfast or lunch. The dough can be prepared up to 2 days in advanced. Then, rolled and filled with the savory or sweet fillings and baked. Best right after it comes out of the oven. Serve with a light salad for lunch or have with just a good cup of coffee or tea.

Now if you are not into savory, is easy to make the galette dough in advanced and fill it with seasonal fresh fruits. Then, store unbaked in the freezer. To bake, just take the frozen ready made galettes right out of the freezer, apply an egg wash and bake at 425 °F for 45 minutes or until golden brown and flaky.

In the summer, I have filled them with peaches, cherries, plums or anything else that was in season and in the winter I filled them with apples, pears or anything else. Let your imagination fuel your baking skills. Enjoy.
